Gingerbread Biscuits/People

 Ingredients:-

  • 350 g plain flour
  • 2 tsp ground ginger
  • ½ tsp ground cinnamon
  • 1 tsp bicarbonate of soda
  • 100 g butter/marg
  • 175 g soft brown sugar
  • 1 egg
  • 3 tbspn golden syrup

 Method:-

Pre-heat oven to 180°C

  • Mix together flour, spices & bicarbonate of soda
  • Rub in butter until it looks like breadcrumbs
  • Add sugar
  • In separate bowl mix egg & syrup – then add to dry ingredients
  • Mix until forms a dough
  • Tip onto floured surface & knead for a minute until smooth
  • Flatten with hands (don not use rolling pins too sticky), cut using gingerbread man cutters
  • Lay on lined baking trays
  • Decorate with currents and glace cherries (optional)
  • Cook for 10-15 mins until golden brown, remove from oven and allow to cool
