- 250g grated carrots
- 150g melted butter or oil
- 2 large free-range eggs
- 200g soft brown or caster sugar
- 200g SR flour
- ½ tsp salt
- 2 tsp cinnamon
- 2 tsp baking powder
- 2 tbsp milk
- Oven at 180 c.
- Melted butter, carrots and sugar in a bowl – mix well.
- Break eggs into a separate bowl – beat then add to the mixture.
- Sieve dry ingredients into the mix and beat until smooth
- Stir in the milk
- Spoon into cake or muffin cases
- Bake for approx. 20 mins – firm to touch.
